A meal in itself, this heart-warming Italian soup is nutritious and delicious. Serve it with fresh crusty bread, grated Parmesan cheese and chopped herbs of your choice.

Instructions
- Chop onion and slice carrots, leek and potato. Dice bacon. Melt butter (or heat the olive oil) in large saucepan. Add bacon, onion and garlic. Cook for 5 minutes.
- Stir in carrots, leeks and peas. Cook for a further 5 minutes.
- Stir in potatoes, stock, tomato puree, basil and seasoning (salt and pepper). Bring to the boil. Cover and simmer for 5 minutes.
- Stir in pasta, rice and tomatoes. Simmer for 15 minutes.
- Adjust seasoning. Remove from heat and serve with herbs, fresh bread and Parmesan, if using.
Recipe Notes
Use thyme and/or parsley instead of basil if you wish.
Replace rice with pasta to simplify the recipe.
Suitable for freezing.
