A meal in itself, this heart-warming Italian soup is nutritious and delicious. Serve it with fresh crusty bread, grated Parmesan cheese and chopped herbs of your choice.

Ingredients

Instructions
  1. Chop onion and slice carrots, leek and potato. Dice bacon. Melt butter (or heat the olive oil) in large saucepan. Add bacon, onion and garlic. Cook for 5 minutes.
  2. Stir in carrots, leeks and peas. Cook for a further 5 minutes.
  3. Stir in potatoes, stock, tomato puree, basil and seasoning (salt and pepper). Bring to the boil. Cover and simmer for 5 minutes.
  4. Stir in pasta, rice and tomatoes. Simmer for 15 minutes.
  5. Adjust seasoning. Remove from heat and serve with herbs, fresh bread and Parmesan, if using.
Recipe Notes

Use thyme and/or parsley instead of basil if you wish.

Replace rice with pasta to simplify the recipe.

Suitable for freezing.
